  • Quickly chop into crumbs using a fork or knife.

  • Quickly knead the dough without using your hands to avoid warming it up.

  • You can do this in the bowl or on a floured surface. The key is to work quickly to ensure the dough remains tender.
    Wrap the dough in plastic wrap and refrigerate for at least half an hour. You can also make it the day before or freeze it for up to a month.

Filling and Shaping the Galette:

  • Prepare the apricots: cut in half and remove the pits. If the fruits are large, cut into quarters.

  • Spread 1.5 tbsp of cornstarch in the center.

  • Sprinkle with sugar. Adjust to taste; I used 100g as my apricots weren’t very sweet.

  • Fold up the edges and pinch them together. The dough is very tender, so handle it carefully to avoid tearing the bottom, which could cause the syrup to leak during baking.
    Pinch the edges as best you can; remember, a galette is supposed to be round and flat by definition.

Baking the Galette:

  • Bake in a preheated oven at 180°C (350°F) for 30-35 minutes.
