- Iceberg salad 400 g
- Chicken fillet 280 g
- Cherry tomatoes 10 pcs
- Loaf 220 g
- Parmesan cheese 80 g
- Garlic 1 clove
- Vegetable oil 1 tbsp
- Salt to taste
- Ground black pepper to taste
For the sauce
- Olive oil 60 ml
- Parmesan cheese 20 g
- Chicken egg 1 pc
- Mustard 2 tsp
- Garlic 1 clove.
- Sugar 1 tsp
- Salt 0.5 tsp
Step by step preparation
- How to make a classic Caesar salad with chicken? Prepare the ingredients for the salad.
- Cut the loaf of bread into small cubes.
- Pour a little oil into a frying pan, add a peeled and crushed garlic clove. Add the sliced bread and stir. Fry the croutons over low heat until crispy. Sometimes you need to stir them. If the garlic starts to burn, remove it. That’s why you don’t need to chop it too much.
- Cut the chicken fillet into small medallions of equal size. Season them with salt and pepper.
- Fry the fillets in a frying pan with a little oil on both sides until golden brown. Remove the fillets from the pan and cool.
- Prepare the ingredients for the sauce. Keep in mind that the taste of the future sauce depends on the ingredients you choose. Choose the mustard you like, but preferably not too spicy, so that it does not block the flavor of other ingredients. Cheese and oil should be of high quality and tasty. Choose a fresh egg.
- Put the egg in a glass and pour boiling water over it. Keep it like this for a minute or two. This way, it won’t boil, but it will be well disinfected.
- Crack the prepared egg into a mixing glass, add the parmesan, mustard, sugar, salt, oil, and chopped garlic.
- Whisk all the ingredients into the sauce with short pulses. It will not be too thick, but still slightly thicker than water.
- Cut the cooled fillet into small pieces.
- Tear lettuce leaves on the bottom of the plate. Pour the sauce over the salad.
- Arrange the chicken pieces and chopped tomatoes.
- Put the croutons on top. Sprinkle with grated Parmesan cheese.
- Finally, pour the sauce over the salad once more. Serve immediately so that the croutons don’t get soggy.
I make Caesar salad very often, but I’ve always used a ready-made dressing. This was the first time I made the sauce myself. Homemade sauce is much tastier than store-bought! And it’s very easy to make. The only thing is that a real classic Caesar sauce must include Worcestershire sauce and anchovies. But they are not often found on sale, so I cooked without them. The most classic Caesar recipe is made with Romano lettuce, but it also tastes delicious with the more affordable Iceberg!
