A fabulous combination of thin sponge cakes and plombir cream with the flavor of melted ice cream is probably the ideal version of Milk Girl cake. Filling, if desired, is made of fruits or berries, the most popular – raspberries, strawberries, peaches, bananas, kiwi, orange, mango, pineapple and their combinations, nuts, dried fruits, candied fruits.
Milk Girl cake with plombir cream
Essentially Diplomat is a classic custard with whipped cream. Since the custard base must cool to room temperature, the preparation of the cake begins with cooking the cream.
Cream Plombier or Diplomat:
- Milk – 500 ml
- Sugar – 200 gr
- Cornstarch – 50 gr
- C0 eggs – 2 pcs
- Butter (82,5%) – 70 gr
- Cream 33-35% – 300 ml
- Vanillin – sachet
Preparation
The highlight of this cake is the plombic cream with a delicate texture, which perfectly harmonizes with milk sponge cakes. In a saucepan heat the milk to 90 ° C. This is the moment close to boiling, when there is an active steam. In a bowl mix eggs, sugar, vanilla sugar, starch with a whisk until combined. Pour in milk in a thin stream while whisking constantly. Pour into a saucepan and boil over low heat while stirring constantly. Whisk vigorously on the bottom so that the thick part does not burn.
When the cream starts to thicken, boil and large bubbles appear, boil for a couple of minutes to avoid the flavor of raw starch in the product. Throw a piece of soft butter into the custard mixture. Stir until dissolved, homogeneous and glossy. Remove from the stove, pour into a glass bowl. Cover with foil in contact, put away in the refrigerator.
After 2-3 hours, we whip 300 ml of cold fat milk cream to soft confident peaks. The fatter they are, the denser the filling cream will be. Whisk and dishes put for 15 minutes in the freezer, so the cream will whip easier and faster. Add the custard base in three steps and knead into a lush cream.
Cakes 18-20 cm
- Condensed milk – 600 gr
- Eggs C1 – 3 pcs
- Flour – 240 gr
- Baking powder – 15 gr
- Salt – a pinch
Beat condensed milk with eggs, add sifted flour and baking powder, mix and let the dough stand for 15 minutes. Heat the oven to 180 degrees, draw a circle of the desired diameter on the back of the parchment.
Spread 2 spoonfuls of dough in the center and spread thinly moving to the edges. Bake for 4 minutes until lightly browned, cool. Cut out warm cakes with a ring or trim with a knife.
Assemble the cake
It is better to assemble in a ring, lay the sides with acetate film. Cream the cake and cover with the next cake, in this sequence continue to the end. Cover the top and sides with cream.
Remove to the refrigerator for a couple of hours, part of the rest of the cream is painted in raspberry color, sift roses from a pastry bag with nozzle closed star, you can serve.
