Plum adjika is an original variety of the famous Caucasian hot sauce. It goes well with any meat, making it play with new flavor shades. This recipe is designed to store the sauce in the refrigerator.
Plum adjika: necessary products for cooking
For this original sauce you will need:
- plums – 5 kg;
- garlic – 5 heads;
- bitter pepper – 4 pods;
- basil – 1 bunch;
- salt and sugar – to taste;
- coriander (ready-made seasoning or crushed dry grains) – 2 tablespoons.
The cooking process
Wash the plums, cut, remove the seeds. Then put them in a large saucepan, add a couple tablespoons of sugar and put on the fire. After boiling stirring stew over low heat until the plums are cooked.
Wash the basil and chop it finely. Peel and chop the garlic. Wash and cut into several pieces, saving the core and small seeds.
When the plum mixture is ready, add basil, garlic, pepper to it. Boil a little and then rub it all with a blender to a homogeneous paste-like state. Add salt to taste.
Adjika plum sauce poured into sterilized jars. It is not rolled up, but covered with kapron lids and stored in the refrigerator. Believe me, this sauce will be a real discovery for you! It is especially good with pork, veal and lamb.
